How to make cinnamon roll pancakes

  1. In a medium mixing bowl, sift together flour, baking powder, and salt.
  2. In another bowl, whisk the egg and then add melted butter and milk. Stir until thoroughly combined.
  3. Add dry ingredients to wet ingredients and mix until just combined - do not over-mix.
  4. To make the cinnamon filling, in a separate bowl, mix together butter, brown sugar, and ground cinnamon until it forms a paste consistency.
  5. Preheat your griddle or frying pan to medium heat, then using a ladle, pour pancake batter onto the pan, making circular pancakes about 3-4 inches in diameter.
  6. Using a piping bag or Ziploc bag with the corner snipped off, pipe the cinnamon filling onto the top of the pancake once it begins to set (about 1 minute).
  7. Flip the pancake over and cook for an additional minute.
  8. Repeat the process until all batter is gone.
  9. To make the cream cheese glaze, beat together softened butter, cream cheese, powdered sugar, vanilla extract, and milk until smooth.
  10. Drizzle cream cheese glaze over warm pancakes and serve immediately.
  11. Add a splash of our Skinny Mixes Sugar-Free Iced Cinnamon Roll Syrup to boost the cinnamon roll flavour.

FAQs

Is there a sugar-free option for the pancakes?

You can substitute sugar for sweeteners, like Stevia, Erythritol, or Xylitol in this cinnamon roll pancake recipe. However, keep in mind that different types of sweeteners may have different sweetness levels and textures, so you may need to adjust the amount which may also affect the overall texture of the pancakes.

Our Skinny Mixes Sugar-Free Iced Cinnamon Roll Syrup will also help you boost the cinnamon roll flavour without the added sugar!

Can I substitute all-purpose flour for gluten-free flour?

Yes, you can use your favourite gluten-free flour instead of all-purpose flour. For example, you could use coconut, almond, or oat flour. However, keep in mind that gluten-free flours may have different textures and may require slightly different ratios of wet-to-dry ingredients. You may need to add more liquid to the batter to achieve the right consistency, so it's always best to follow the instructions on the gluten-free flour blend package. Additionally, you may want to add some xanthan gum (usually sold near gluten-free flours) to help bind the batter together and create a fluffier texture.

Is it possible to create a vegan, dairy-free recipe?

Of course! Just replace the egg with a vegan egg made by mixing 1 tablespoon of chia or flax with 2 tablespoons of water and let it rest for 5-10 minutes until it has a jelly consistency. Additionally, you can substitute cow’s milk for almond, coconut, oat, or soy milk.

Here’s how you can make a vegan cream cheese glaze:

Ingredients:

  1. 4 oz vegan cream cheese
  2. 1/4 cup powdered sugar
  3. 1 1/2 tbsp non-dairy milk (such as almond, soy, or coconut milk)
  4. 1 tsp vanilla extract

Preparation:

  • In a medium bowl, beat the vegan cream cheese with an electric mixer until smooth and creamy.
  • Add the powdered sugar, non-dairy milk, and vanilla extract to the bowl, and continue to beat with the electric mixer until the mixture is smooth and well combined.
  • If the glaze is too thick, add additional non-dairy milk, 1 tablespoon at a time, and continue to beat until it reaches the desired consistency.
